Pork Marinade

Taco Assembly

Method

Marinating the Pork

  1. 1

    Prepare the Marinade

In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, cumin, salt, and black pepper.

  2. 2

    Marinate the Pork

Rub the pork shoulder with olive oil and then coat it evenly with the spice mixture. Drizzle apple cider vinegar over the pork and place it in a resealable plastic bag or airtight container. Marinate for at least 2 hours, preferably overnight in the refrigerator.

Cooking the Pork

  1. 3

    Prepare the Smoker

Preheat your smoker to 225°F (107°C).

  2. 4

    Smoke the Pork

Remove the pork from the marinade and place it in the smoker. Smoke the pork shoulder for approximately 8-10 hours, or until it reaches an internal temperature of 195°F (90°C) for pulled pork.

  3. 5

    Rest the Pork

Once cooked, remove the pork from the smoker and let it rest for at least 30 minutes before shredding.

Assembling the Tacos

  1. 6

    Prepare the Tortillas

Warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side until pliable.

  2. 7

    Assemble the Tacos

Shred the smoked pork and place a generous amount on each tortilla. Top with fresh cilantro, diced red onion, and a dollop of sour cream. Serve with lime wedges on the side.
