Prepare the Sherry Onions
In a skillet over medium heat, add 1 tablespoon of olive oil and 1 sliced onion. Cook until softened, about 5 minutes. Add 1/4 cup of sherry and simmer until the liquid is reduced and the onions are caramelized, about 10 more minutes. Season with salt and pepper to taste.

Cook the Burger Patties
Form the ground beef into two even patties, about 1/2 inch thick. Season both sides with salt and pepper. Heat a grill or skillet over medium-high heat and cook the patties for about 3-4 minutes on each side for medium-rare. In the last minute of cooking, place a slice of Gruyere cheese on each patty to melt.

Assemble the Burger
Toast the brioche buns lightly. Spread aioli on the bottom bun, place the burger patty with melted Gruyere on top, add the sherry onions, and top with cornichons. Close the burger with the top bun.

Serve the Double Bistro Burger with a side of fries or a green salad.
