Prepare the Meat Mixture
In a large mixing bowl, combine the ground beef, ground lamb, and fatback. Mix well until combined.

Add minced garlic, red pepper flakes, cumin powder, black pepper, salt, and paprika to the meat mixture. Mix thoroughly to ensure even distribution of spices.

Stuff the Casings
Rinse the natural sheep casings in cold water and soak them in water for about 30 minutes. Use a sausage stuffer to fill the casings with the meat mixture, being careful not to overstuff. Tie off the ends of the sausages.

Place the stuffed sausages in the refrigerator for at least 24 hours to allow the flavors to develop and for the sausages to cure.
