    Prepare the Filling

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add finely chopped onion and sauté until translucent. Stir in the rice and cook for another 2 minutes, then add parsley, dill, lemon juice, salt, and pepper. Mix well and remove from heat.

    Prepare Grape Leaves

    If using jarred grape leaves, rinse them under cold water to remove excess brine. If using fresh leaves, blanch them in boiling water for 2-3 minutes until softened. Drain and set aside.

    Stuff the Grape Leaves

    Place a grape leaf on a flat surface, vein side up. Place a tablespoon of the rice mixture near the base of the leaf, fold in the sides, and roll tightly from the base to the tip. Repeat with remaining leaves and filling.

    Cook the Stuffed Leaves

    In a large pot, arrange the stuffed grape leaves seam side down. Drizzle with the remaining olive oil and add water or vegetable broth until covered. Place a plate on top to keep them submerged. Bring to a boil, then reduce heat, cover, and simmer for 45 minutes.

    Serve

    Once cooked, remove from heat and let them sit for 10 minutes before serving. Serve warm or at room temperature with lemon wedges.
