Dough and Filling

Method

Preparing Manti

  1. 1

    Make the Dough

In a large bowl, mix the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms and knead for about 10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

  2. 2

    Prepare the Filling

In a bowl, combine ground meat, chopped onion, black pepper, red pepper flakes, and parsley. Mix well to combine.

  3. 3

    Roll Out the Dough

After resting, roll out the dough on a floured surface to about 1/8 inch thick. Cut into squares (about 3 inches).

  4. 4

    Fill and Shape the Dumplings

Place a teaspoon of the filling in the center of each square. Fold the corners to the center and pinch to seal the dumplings.

  5. 5

    Cook the Manti

Bring a large pot of salted water to a boil. Drop the manti in batches and cook for about 8-10 minutes until they float to the top. Remove with a slotted spoon.

  6. 6

    Serve

Serve hot with yogurt and a drizzle of melted butter, optionally sprinkled with sumac or paprika.
