Prepare the Meat
In a large bowl, combine grated onion, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and olive oil. Add the lamb or beef and mix well to coat the meat. Cover and marinate for at least 2 hours, preferably overnight in the fridge.

Cook the Meat
If you have a vertical spit, layer the marinated meat onto it and cook it slowly until tender. If not, you can place the marinated meat in a slow cooker or an oven at 160°C (320°F) for about 2-3 hours until the meat is cooked and tender. Slice thinly once cooked.

Prepare the Rice
In a pot, bring the vegetable broth to a boil. Add the rice, reduce heat, cover, and let it simmer for 18-20 minutes or until the rice is cooked and fluffy. Fluff with a fork.

Grill the Vegetables
Preheat a grill or grill pan over medium heat. Grill the halved tomatoes and bell peppers for about 5-7 minutes until they have nice grill marks and are tender.

Assemble the Platter
On a serving platter, arrange the sliced meat, rice, grilled vegetables, and garnish with fresh parsley. Serve with lemon wedges on the side.
