Preparation and Cooking
- 1
Prepare the Filling
In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the fresh spinach and cook until wilted. Remove from heat and let it cool slightly. In a bowl, mix the sautéed spinach and onion with crumbled feta cheese, black pepper, and salt to taste.
- 2
Assemble the Cigara Borek
Lay one sheet of filo pastry on a clean surface and brush lightly with melted butter or olive oil. Place a second sheet on top and brush again. Cut the layered pastry into long strips about 10 cm wide. Place a spoonful of the filling at one end of each strip and roll it tightly into a cigar shape. Seal the edges with a bit of beaten egg.
- 3
Bake the Borek
Preheat the oven to 200°C (400°F). Place the rolled cigara borek on a baking sheet lined with parchment paper. Brush the tops with the remaining beaten egg and sprinkle sesame seeds on top. Bake for 20-25 minutes or until golden brown and crispy.
- 4
Serve
Remove from the oven and let cool slightly before serving. Enjoy warm!
