Prepare the Vegetables
Wash and chop the zucchini, bell pepper, and red onion into small, even-sized pieces.

Cook the Filling
In a large skillet, heat the olive oil over medium heat. Add the chopped zucchini, bell pepper, corn, and red onion. Sauté for about 5-7 minutes until the vegetables are tender.

Season the Filling
Stir in the cumin, chili powder, salt, and black pepper. Cook for an additional 2 minutes, mixing well to combine the spices with the vegetables.

Make the Salsa
In a medium bowl, combine the diced tomatoes, chopped cilantro, lime juice, minced garlic, and salt. Mix well and set aside to let the flavors meld.

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until soft and pliable.

Assemble the Tacos
Place a generous spoonful of the vegetable filling onto each tortilla. Top with a spoonful of the salsa.

Serve the tacos immediately, garnished with additional cilantro if desired.
