For the Taco Chips

    Prepare the Tortillas

    Stack the corn tortillas and cut them into quarters to create triangles.

    Heat the Oil

    In a large skillet or frying pan, heat the vegetable oil over medium-high heat until hot but not smoking.

    Fry the Chips

    Add a handful of tortilla triangles to the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes until they are golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

    Season the Chips

    While still hot, sprinkle the fried chips with salt to taste.

For the House-Made Salsa

    Prepare the Vegetables

    Dice the fresh tomatoes, finely chop the red onion, and jalapeño pepper (remove seeds for less heat if desired).

    Mix the Ingredients

    In a mixing bowl, combine the diced tomatoes, chopped red onion, jalapeño, and chopped cilantro.

    Add Lime Juice and Season

    Pour the lime juice over the mixture, add salt, and stir everything together until well combined.

    Cover and let the salsa sit in the refrigerator for at least 30 minutes to allow the flavors to meld.
