Cooking the Rice and Beans

In a medium pot, combine 1 cup of long-grain white rice with 2 cups of water. Bring to a boil over medium-high heat.

Cook the Rice
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

Heat the Beans
While the rice is cooking, heat 1 cup of pinto beans in a small saucepan over medium heat. Stir occasionally until the beans are heated through, about 5-7 minutes.

Combine Protein
If using pre-cooked protein (chicken, beef, or tofu), add 1 cup to the saucepan with the beans to warm through, about 5 minutes.

Make the Salsa
In a mixing bowl, combine 1 cup of diced tomatoes, 1 small finely chopped red onion, 1 tablespoon of chopped fresh cilantro, 2 tablespoons of lime juice, and 0.5 teaspoon of salt. If desired, add 1 small finely chopped jalapeño for extra heat.
