Cooking Rice

Cook the Rice
In a medium saucepan, combine 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed and the rice is fluffy. Remove from heat and let it sit covered for 5 minutes.

Cook the Ground Beef
In a skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat. Add 2 tablespoons of taco seasoning and a small amount of water if necessary, stirring well to combine. Cook for an additional 5 minutes until the seasoning is well incorporated.

Prepare the Beans
In a small saucepan, combine 1 cup of black beans and 1 cup of canned corn. Heat over medium heat until warmed through, about 5 minutes. Stir occasionally.

Build Your Burrito Bowl
In a large bowl, start with a base of the cooked rice. Next, add the seasoned ground beef, followed by the warmed black beans and corn mixture. Top with shredded cheddar cheese, sour cream, guacamole, sliced jalapeños, and chopped cilantro. Squeeze fresh lime juice over the top and add salsa if desired.
