Method

Prepare the Base

    Cook Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Prepare Chickpeas

    Open a can of chickpeas, drain, and rinse under cold water. Set aside.

    Cook Tofu

    Press the block of tofu between paper towels to remove excess moisture. Cut it into cubes. In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the tofu cubes and cook until golden brown on all sides, about 10 minutes. Season with salt and pepper to taste.

Prepare the Vegetables

    Chop Vegetables

    While the quinoa and tofu are cooking, wash and chop the spinach, cherry tomatoes, and cucumber. Slice the avocado just before serving to prevent browning.

Assemble the Bowl

    Combine Ingredients

    In a large bowl, fluff the cooked quinoa with a fork. Top with the cooked tofu, chickpeas, spinach, cherry tomatoes, cucumber, and avocado slices.

    Prepare Dressing

    In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, salt, and pepper. Drizzle over the assembled bowl.

    Sprinkle sesame seeds over the top for added crunch and flavor.
