Steak Preparation

    Marinate the Steak

    In a bowl, whisk together olive oil, lime juice, garlic powder, ground cumin, salt, and black pepper. Add the sirloin steak and coat it thoroughly. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and grill or sear for about 4-5 minutes on each side, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing into thin strips.

    Make the Valentina Mayo

    In a small bowl, combine mayonnaise, Valentina hot sauce, and lime juice. Mix until smooth and set aside.

Pickled Vegetables Preparation

    Prepare the Pickled Vegetables

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, then remove from heat. Add sliced carrots and red onions to the mixture. Allow to cool to room temperature, then refrigerate for at least 30 minutes before using.

    Assemble the Tacos

    Warm the corn tortillas in a dry skillet or microwave. Place sliced steak on each tortilla, top with pickled vegetables, a drizzle of Valentina mayo, and garnish with fresh cilantro. Serve immediately.
