Method

Preparation

  1. 1

    Rinse and Drain Rice

Place the long-grain white rice in a fine mesh strainer and rinse it under cold water. This helps remove excess starch. Allow it to drain well.

  2. 2

    Prep Vegetables

Dice the red bell pepper and onion into small pieces. Set aside.

Cooking

  1. 3

    Sauté Onions and Peppers

In a large saucepan, heat the olive oil over medium heat. Add the diced onion and red bell pepper and sauté for about 5 minutes, or until the onion becomes translucent.

  2. 4

    Add Spices

Stir in the cumin, paprika, chili powder, garlic powder, salt, and black pepper. Cook for an additional 1 minute until fragrant.

  3. 5

    Combine Rice and Broth

Add the rinsed rice to the saucepan, stirring to combine with the sautéed vegetables and spices. Pour in the vegetable broth, and bring to a boil.

  4. 6

    Simmer

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.

  5. 7

    Add Beans and Tomatoes

After the rice is cooked, stir in the canned black beans (drained and rinsed) and diced tomatoes. Cook for another 5 minutes to heat through.

  6. 8

    Finish and Serve

Remove from heat and stir in the chopped fresh cilantro. Fluff the rice and beans with a fork before serving. Enjoy your spiced rice and beans!
