Method

Prepare the Soy Curl Filling

    Rehydrate the Soy Curls

    In a bowl, combine the soy curls with 1 cup of hot water. Let them sit for 10-15 minutes until they rehydrate and become tender.

    Sauté the Soy Curls

    Drain the soy curls and heat 1 tablespoon of black chili oil in a pan over medium heat. Add the rehydrated soy curls and sauté for 5-7 minutes, or until they are slightly crispy. Remove from heat.

Make the Guacamole

    Prepare the Avocado

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until smooth or chunky, depending on your preference.

    Mix in Other Ingredients

    Add lime juice, salt, minced garlic, diced tomato, diced onion, and chopped cilantro to the mashed avocado. Stir until well combined.

Assemble the Tacos

    Warm the Tortillas

    In a skillet, heat the corn tortillas for about 30 seconds on each side until they are warm and pliable.

    Fill the Tacos

    Place a portion of the sautéed soy curls on each tortilla. Top with shredded cabbage, pickled onion, and additional cilantro.

    Add Guacamole

    Spoon a generous amount of guacamole on top of the fillings in each taco.

    Drizzle with Black Chili Oil

    Finish off with a drizzle of the remaining black chili oil over the tacos for an extra kick.
