Pork Preparation

Prepare the Pork
In a slow cooker, place the pork shoulder and add minced garlic, chopped onion, cumin, smoked paprika, salt, and black pepper.

Add Liquid
Pour in the chicken broth and lime juice over the pork.

Slow Cook
Cover and cook on low for 8 hours or until the pork is tender and easily shreds with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the cooker to absorb more juices.

Chill Salsa
Let the salsa sit for at least 30 minutes to allow the flavors to meld.
Taco Assembly

Warm Tortillas
Lightly warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side.

Assemble Tacos
Place shredded pork on each tortilla, top with pineapple salsa, and garnish with extra cilantro.

Serve the tacos with lime wedges on the side for squeezing over the top.
