Pork Carnitas

Prepare the Pork
In a slow cooker, add the pork shoulder, orange juice, lime juice, garlic cloves, cumin, salt, black pepper, and bay leaves.

Cook the Pork
Cover and cook on low for 8 hours or until the pork is tender and easily shreds with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred using two forks. Discard any excess fat and bay leaves.

Prepare the Cheese Skirt
In a skillet over medium heat, sprinkle a mixture of cheddar and monterey jack cheese to form a thin layer. Cook until melted and slightly crispy, then carefully lift and set aside.
Assembly

Assemble the Gringa
Warm the flour tortillas in a separate skillet for a few seconds on each side. Spread a layer of sour cream on each tortilla, add a generous amount of shredded pork carnitas, top with salsa fresca, and place the cheese skirt on top. Roll the tortillas tightly to enclose filling.

Serve the Pork Gringas warm, optionally with extra salsa fresca or sour cream on the side.
