Preparing Tortilla Chips

Cutting Tortillas
Cut each corn tortilla into 6 wedges to create triangle-shaped chips.

Frying Chips
Heat vegetable oil in a deep frying pan over medium heat. Once hot, carefully add the tortilla wedges in batches and fry until golden brown and crispy, about 2-3 minutes per batch. Remove chips with a slotted spoon and drain on paper towels.

Preheat your oven to 400°F (200°C). Slice the jalapeños in half lengthwise and remove the seeds for less heat if desired.

Place the jalapeño halves on a baking sheet lined with parchment paper. Roast in the oven for about 15-20 minutes, or until they are slightly charred and tender.
Assembling Nachos

Layering
On a large platter, arrange a layer of the fried tortilla chips. Evenly distribute the roasted jalapeños, cheddar cheese, monterey jack cheese, and feta cheese on top of the chips.

Place the assembled nachos under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.

Remove the nachos from the oven and drizzle with chipotle crema. Top with salsa fresca and sprinkle with fresh cilantro before serving.
