    Cook the Tater Tots

    Preheat your oven to 425°F (220°C). Spread the frozen tater tots on a baking sheet in a single layer. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

    Cook the Chorizo

    While the tater tots are baking, heat a skillet over medium heat. Remove the chorizo from its casing and crumble it into the skillet. Cook for 6-8 minutes until browned and cooked through, stirring occasionally.

    Prepare Lime Crema

    In a small bowl, combine the sour cream, lime juice, and lime zest. Mix until smooth and set aside.

    Prepare Eggs

    In a separate pan, heat some oil over medium heat. Crack the eggs into the pan and cook sunny side up for about 3-4 minutes, or until the whites are set but the yolks remain runny.

Assembly

    Once the tater tots are done, remove them from the oven and place them on a serving platter. Top with cooked chorizo, queso blanco, and salsa fresca. Carefully place the sunny side up eggs on top.
