Horchata Preparation

Soak the Rice
In a large bowl, combine the long grain white rice and 2 cups of water. Let the rice soak for at least 4 hours, preferably overnight. This will soften the rice.

Strain the Mixture
Using a fine-mesh strainer or cheesecloth, strain the blended mixture into a large pitcher. Press down on the solids to extract as much liquid as possible. Discard the solids.

Chill and Serve
Refrigerate the horchata for at least 1 hour to chill. When ready to serve, give it a good stir and pour over ice. Sprinkle with ground cinnamon on top if desired.
