Horchata Preparation

    Soak the Rice

    In a large bowl, combine the long grain white rice and 2 cups of water. Let the rice soak for at least 4 hours, preferably overnight. This will soften the rice.

    Blend the Rice

    After soaking, drain the rice and place it in a blender. Add the remaining 2 cups of water and 2 cinnamon sticks. Blend the mixture on high until the rice and cinnamon are finely ground, about 1-2 minutes.

    Strain the Mixture

    Using a fine-mesh strainer or cheesecloth, strain the blended mixture into a large pitcher. Press down on the solids to extract as much liquid as possible. Discard the solids.

    Add Milk and Flavorings

    To the strained rice water, add the milk, vanilla extract, sugar, and a pinch of salt. Stir well until the sugar is completely dissolved.

    Chill and Serve

    Refrigerate the horchata for at least 1 hour to chill. When ready to serve, give it a good stir and pour over ice. Sprinkle with ground cinnamon on top if desired.
