Cut the Pacific cod fillets into nugget-sized pieces, about 1 to 2 inches each.

Make the Battering Mixture
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Mix well.

Add Sparkling Water
Gradually pour in the cold sparkling water into the flour mixture while whisking until the batter is smooth and without lumps.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each piece of cod into the batter, ensuring it is fully coated.

Fry the Fish Nuggies
Carefully place the battered fish pieces into the hot oil in batches, being sure not to overcrowd the pot. Fry until golden brown, about 3-4 minutes, then remove and drain on paper towels.

In a small bowl, combine the mayonnaise, ketchup, lemon juice, and dill pickle relish. Stir until well mixed.
