Preheat the Oven
Preheat your oven to 350°F (175°C) to prepare for baking the cookies.

Combine Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking soda, ground ginger, cayenne pepper, granulated sugar, brown sugar, and salt until evenly mixed.

Cream Butter and Sugars
In another bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

Combine Mixtures
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

Fold in Chocolate Chips
Gently fold in the semi-sweet chocolate chips until evenly distributed throughout the dough.
Baking

Scoop the Dough
Using a tablespoon or cookie scoop, drop rounded tablespoons of cookie dough onto a baking sheet lined with parchment paper, leaving space between each cookie.

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked; they will continue to cook as they cool.
