Method
Preparation of Soy Curls

Rehydrate Soy Curls
Place the soy curls in a bowl and cover them with hot water. Let them soak for about 10-15 minutes until they become soft. Drain and squeeze out excess water.

Cook Soy Curls
In a skillet over medium heat, add a bit of oil. Add the rehydrated soy curls and cook for 5-7 minutes until they are slightly crispy and golden. Season with salt and pepper to taste.
Making Guacamole

Mash Ingredients
In a bowl, scoop out the ripe avocados and mash them with a fork until smooth. Add lime juice, salt, diced tomatoes, and chopped cilantro. Mix until well combined.
Preparing Black Chilli Mayo

Mix Mayo and Spices
In a bowl, combine mayonnaise, black chili powder, lime juice, and salt. Mix well until smooth and set aside.
Assembling the Burrito

Roll the Burrito
Fold in the sides of the tortilla and roll from the bottom up to enclose the filling tightly. Repeat with remaining tortillas.

Cut the burritos in half and serve immediately with any remaining guacamole or black chili mayo on the side.
