Preparing the Chicken

Season the Chicken
In a bowl, mix together the olive oil, cumin, paprika, salt, and pepper. Coat the chicken breasts with the mixture and let marinate for at least 15 minutes.

In a skillet over medium heat, cook the marinated chicken breasts for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing.
Making the Salsa Fresca

In a bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and salt. Mix well and set aside.
Preparing the Lime Crema

Mix the Crema
In a small bowl, combine the sour cream, lime juice, and salt. Stir until smooth and well combined.
Assembling the Quesadillas

Layer the Ingredients
On one half of each tortilla, sprinkle a layer of cheddar and Monterey Jack cheese. Add sliced chicken and a spoonful of salsa fresca on top of the cheese. Fold the tortilla over.
