Beef Brisket Preparation

    Prepare the Brisket

    Rub the beef brisket with minced garlic, chopped onion, chipotle peppers, cumin, oregano, salt, and black pepper. Ensure the brisket is evenly coated.

    Place the brisket in a slow cooker. Pour the beef broth over it. Cook on low for 8-10 hours or until the meat is tender and shreds easily.

    In a saucepan, combine rice, chicken broth, and cumin. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked and liquid is absorbed. Fluff with a fork and stir in chopped cilantro.

Black Beans

    Prepare the Black Beans

    In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent. Stir in the black beans, cumin, and salt. Cook for another 5-7 minutes until heated through.

Arugula Slaw

    In a large bowl, combine arugula, julienned carrot, lime juice, olive oil, and salt. Toss until well mixed and set aside.
