Preparation

    Prepare the Potatoes

    Peel the Russet potatoes and cut them into small cubes. Place them in a pot of salted water and bring to a boil. Cook for about 10-12 minutes or until tender. Drain and set aside.

    Cook the Beef

    In a skillet over medium heat, add the ground beef. Cook until browned and fully cooked, about 8-10 minutes. Drain excess fat and season with salt and pepper to taste.

    Prepare the Eggs

    In a bowl, whisk the eggs until well combined. Season with a pinch of salt and pepper.

    Scramble the Eggs

    In the same skillet with the cooked beef, reduce the heat to low. Add the whisked eggs and cook gently, stirring occasionally, until the eggs are just set, about 5 minutes. Add the cooked potatoes and mix gently to combine.

    Add Cheese

    Sprinkle the white cheddar and Monterey Jack cheese over the beef and egg mixture. Cover the skillet with a lid to melt the cheese, about 2-3 minutes.

    Once the cheese is melted, remove from heat. Drizzle with black chili mayo and black chili oil. Top with pickled onions and fresh cilantro before serving.
