Preparing the Fries

Prep the Potatoes
Wash and peel the russet potatoes. Cut them into 1/4 inch thick strips.

Soak the Potatoes
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the water and pat the fries dry with a clean towel.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes (First Fry)
Carefully add the fries to the hot oil in batches and fry for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

Fry the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 3-4 minutes until they are golden brown and crispy. Drain on paper towels and season with salt.
Cooking the Steak

Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Sear the Steak
Add the seasoned ribeye steaks to the hot skillet. Sear for 4-5 minutes without moving them, until a golden crust forms.

Rest the Steak
Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
