Method

Preparing the Fries

  1. 1

    Cut the Potatoes

Peel the potatoes and cut them into even strips, about 1/4 inch thick.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

  3. 3

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  4. 4

    Fry the Potatoes

Drain the potatoes and pat them dry with a kitchen towel. Carefully add them to the hot oil in batches, frying for about 5-7 minutes or until they are golden brown.

  5. 5

    Drain and Season

Remove the fries from the oil and let them drain on paper towels. Sprinkle with salt while still hot.

Cooking the Steak

  1. 6

    Season the Steak

Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper.

  2. 7

    Heat the Pan

In a large cast-iron skillet, heat the olive oil over medium-high heat until shimmering.

  3. 8

    Sear the Steak

Add the seasoned ribeye steaks to the skillet, cooking for about 4-5 minutes on each side for medium-rare. Adjust time based on desired doneness.

  4. 9

    Add Flavor

In the last minute of cooking, add the garlic cloves and rosemary to the pan, basting the steak with the flavorful oil.

  5. 10

    Rest the Steak

Remove the steaks from the skillet and let them rest on a plate for at least 5 minutes before slicing.
