Pasta Preparation

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water before draining.

Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.
Combining

Combine Pasta and Sauce
Add the drained spaghetti to the skillet with the pancetta. Toss to combine and allow to cool slightly for about 1 minute.

Add the Egg Mixture
Quickly pour the egg and cheese mixture over the spaghetti while tossing continuously to create a creamy sauce. Add reserved pasta water a little at a time until desired consistency is reached.

Serve the carbonara immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
