Prepare the Gelatin
In a small bowl, combine the gelatin powder and water. Let it sit for about 5 minutes until it blooms and becomes gelatinous.

Heat the Cream Mixture
In a medium saucepan, combine heavy cream, whole milk, and granulated sugar over medium heat. Stir continuously until the sugar dissolves and the mixture is hot, but not boiling.

Add Gelatin and Vanilla
Remove the saucepan from heat. Stir in the bloomed gelatin and vanilla extract until fully dissolved.

Pour and Chill
Pour the mixture into individual serving glasses or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
Berry Coulis

Prepare the Berries
In a saucepan, combine the mixed berries, granulated sugar, and lemon juice.

Cook the Coulis
Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens, about 10-15 minutes.

Blend and Strain
Remove from heat and let cool slightly. Blend the mixture until smooth, then strain through a fine sieve to remove seeds, if desired.

Cool the Coulis
Allow the berry coulis to cool completely before serving.
