Preparing the Lamb Shank

    Searing the Lamb

    In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Season the lamb shanks with salt and black pepper. Once the oil is hot, add the lamb shanks and sear them on all sides until browned (about 4-5 minutes per side). Remove the shanks and set aside.

    Sautéing the Aromatics

    In the same pot, add chopped onion, minced garlic, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Deglazing the Pan

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for about 2-3 minutes until the wine is reduced slightly.

    Simmering the Lamb

    Return the lamb shanks to the pot and add the beef or lamb stock. Add the fresh rosemary sprigs. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 2 to 2.5 hours, or until the lamb is tender and easily falls off the bone.

Preparing the Mashed Potatoes

    Boiling the Potatoes

    Peel and chop the potatoes into equal-sized chunks. Place them in a pot of salted boiling water and cook for about 15-20 minutes, or until fork-tender.

    Mashing the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

Preparing the Seasonal Vegetables

    Cooking the Vegetables

    While the lamb shank is simmering, chop the zucchini, bell pepper, and trim the asparagus. In a separate pan, sauté the vegetables in a little olive oil over medium heat for about 5-7 minutes until tender-crisp. Season with salt and pepper.

    Plating the Dish

    Once the lamb is cooked and tender, serve it on a plate alongside a generous scoop of mashed potatoes and a portion of seasonal vegetables. Drizzle some of the cooking juices over the lamb for added flavor.
