Method
Preparing the Calamari

Clean the Calamari
If using whole calamari, clean and cut them into rings. Rinse under cold water and pat dry.

Prepare the Breading
In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and paprika.

Coat the Calamari
Dip each calamari ring first into the egg wash, then into the flour mixture, ensuring it's fully coated.
Frying the Calamari

Heat the Oil
In a deep pan or fryer, heat the vegetable oil to 375°F (190°C).

Fry the Calamari
Fry the calamari in batches, making sure not to overcrowd the pan, for about 2-3 minutes or until golden brown and crispy.

Drain
Remove the calamari with a slotted spoon and place on paper towels to drain excess oil.
Making the Garlic Aioli

Combine Ingredients
In a bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and black pepper until well combined.

Chill
Refrigerate the garlic aioli for at least 30 minutes to let the flavors meld.
