Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 200°C (400°F) to ensure it's hot enough to bake the cakes.
- 2
Prepare Ramekins
Grease four ramekins with butter and lightly dust with flour to prevent sticking. Place them on a baking sheet for easy handling.
Making the Cake
- 3
Melt Chocolate and Butter
In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring until completely melted and smooth.
- 4
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar and eggs until well combined and slightly frothy. Add the vanilla extract and a pinch of salt.
- 5
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture while stirring continuously to prevent the eggs from cooking.
- 6
Add Flour
Sift in the all-purpose flour and gently fold it into the mixture until just combined. Do not overmix.
Baking
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 8
Bake
Bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft and jiggly.
- 9
Cool and Serve
Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate and gently lift off to release the cake.
Serving
- 10
Plate the Cake
Serve each chocolate lava cake immediately with a scoop of vanilla ice cream on the side.
- 11
Garnish
Dust with powdered sugar for an elegant finish before serving.
