Fondant Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water. Stir occasionally until melted and smooth. Remove from heat and let cool slightly.

Mix Sugar and Eggs
In another mixing bowl, whisk together the granulated sugar and eggs until the mixture is pale and fluffy, about 3-4 minutes.

Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously until well combined.

Add Dry Ingredients
Sift in the all-purpose flour, vanilla extract, and a pinch of salt. Gently fold the mixture until just combined. Do not overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes. The edges should be firm, while the center remains soft.

Cool Slightly
Remove from the oven and let the fondants cool in the ramekins for 1-2 minutes. Then, gently run a knife around the edges and invert onto serving plates.
Serving

Plate the Fondant
Carefully place each chocolate fondant on a plate.

Add Ice Cream
Top each fondant with a scoop of vanilla ice cream.

If desired, add fresh berries around the fondant for added color and flavor.
