Preheat the oven to 400°F (200°C). Place the wrapped beef on a baking tray and bake for 25-30 minutes, or until the pastry is golden brown. Let it rest for 10 minutes before slicing.

Preparing the Sauce
In a saucepan, combine red wine and beef stock. Bring to a boil and reduce the heat to a simmer. In a separate pan, melt butter and whisk in flour to create a roux. Gradually add the wine mixture to the roux, stirring continuously until the sauce thickens. Season with salt and black pepper.
