Heat a heavy skillet or grill pan over medium-high heat. Brush both sides of the sourdough slices lightly with olive oil (about 1/2 tbs per side) and, if using, spread a thin layer of butter on one side of each slice.

Place slices in the hot pan or under a broiler. Cook 2–3 minutes per side in the skillet until golden brown and crisp with nice char marks, or 1–2 minutes under a high broiler per side—watch closely to prevent burning. Remove and keep warm.

Prepare the avocado

Cut the avocado in half, remove the pit, and scoop the flesh into a medium bowl. Using a fork or a potato masher, roughly smash the avocado so it’s mostly creamy with some small chunks for texture.

Season the avocado

Add the lime juice, extra virgin olive oil, sea salt, black pepper, and crushed red pepper flakes to the smashed avocado. Mix gently to combine. Taste and adjust seasoning—add more lime or salt if needed.

Cook the bacon

If using bacon, lay strips in a cold skillet, then turn heat to medium. Cook 7–10 minutes, flipping occasionally, until crisp to your liking. Transfer to a paper towel-lined plate to drain.

Cook the eggs (your style)

Heat a small nonstick pan over medium with 1 tsp butter or oil. For sunny-side-up: crack eggs into the pan, cook 2–3 minutes until whites set but yolks runny; cover for 30–60 seconds to finish whites if needed. For over-easy/medium: cook until whites set, flip gently and cook another 15–45 seconds. For scrambled: whisk eggs with a pinch of salt, pour into pan, stir gently until soft curds form. Remove from heat just before fully done—eggs will continue to cook slightly.

Assembly & garnish

Divide the smashed avocado evenly over the two toasted sourdough slices, using a spoon to mound it slightly in the center of each slice.

Sprinkle everything bagel seasoning evenly over the avocado (about 1/2 tsp per slice). Add flaky sea salt lightly to finish and a few turns of freshly ground black pepper if desired.

If using, place cooked bacon strips on top (either whole or torn) and finish with the prepared eggs any style. Garnish with microgreens or cilantro and a tiny drizzle of olive oil if desired.

Serve immediately while toast is still crisp and eggs (if used) are warm. Enjoy.
