    Cook the Wild Rice

    Rinse 1 cup of wild rice under cold water. In a pot, add the rinsed rice and 3 cups of water. Bring to a boil, then reduce to a simmer. Cover and cook for about 45 minutes or until the rice is tender. Drain any excess water and set aside.

    Prepare the Blackened Chicken

    Season the chicken pieces with salt, pepper, and a blackening spice blend. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until blackened and cooked through. Remove from heat and let it rest before slicing.

    Chop the Vegetables and Fruits

    While the chicken is cooking, shred the cabbage and kale. Dice the avocado and apple. Chop the cilantro. Set aside all the chopped ingredients in separate bowls.

    Combine Chickpeas and Seasoning

    In a bowl, combine the chickpeas with nori sesame seasoning and a drizzle of olive oil. Toss well to coat.

    In a large serving bowl, layer the cooked wild rice, shredded cabbage, shredded kale, chickpeas, diced apple, avocado, and sliced blackened chicken. Drizzle with hot sauce and a squeeze of fresh lemon juice. Garnish with chopped cilantro.
