Heat the Oil
In a large pot or deep fryer, heat the avocado oil over medium-high heat until it reaches 350°F (175°C). You can use a candy thermometer to check the temperature.

Fry the Potato Slices
Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry them for about 3-4 minutes or until they are golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle sea salt over the chips to taste.

Continue to fry the remaining potato slices in batches, ensuring the oil temperature remains consistent. Add sea salt as needed after draining.

Once all the chips are fried and seasoned, serve them warm as a delicious snack or side dish.
