    Prepare the Ingredients

    Gather all ingredients. Preheat your oven to 400°F (200°C) for roasting the sweet potatoes.

    Roast the Sweet Potatoes

    Peel and cut the sweet potatoes into cubes. Toss them in 1 tablespoon of olive oil, season with salt and pepper, and spread on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized.

    Cook the Wild Rice and Quinoa

    In separate pots, cook the wild rice and golden quinoa according to package instructions. This typically takes about 40-50 minutes for wild rice and 15 minutes for quinoa.

    Prepare the Broccoli

    In a pot, bring water to a boil and add the broccoli florets. Blanch for about 3-5 minutes until bright green and tender. Remove and immediately place in ice water to stop cooking. Drain and set aside.

    Season the chicken pieces generously with the blackening spice. Heat a skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Sear the chicken for about 5-7 minutes on each side, or until cooked through and blackened on the outside. Let rest before slicing.

    In a large bowl, combine the cooked wild rice, quinoa, chickpeas, blanched broccoli, and roasted sweet potatoes. Drizzle with olive oil and squeeze fresh lemon juice over the top. Toss gently to mix.
