Prepare the Sweet Potatoes
Preheat the oven to 400°F (200°C). Peel and dice the sweet potatoes into small cubes. Toss them in a bowl with olive oil, salt, and pepper to taste. Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until they are golden and tender, turning halfway through.

Prepare the Apples
While the sweet potatoes are roasting, wash and core the apples. Cut them into thin slices or bite-sized chunks depending on your preference. Set aside.

Prepare the Chicken
If using pre-cooked roasted chicken, shred or chop the chicken into bite-sized pieces. If cooking from raw, season the chicken with salt, pepper, and your choice of herbs, and roast in the oven for about 25-30 minutes until cooked through and juices run clear. Let it cool slightly, then chop.

Assemble the Dish
In a large bowl, combine the roasted sweet potatoes, sliced apples, and roasted chicken. Drizzle the balsamic vinaigrette over the top and toss gently to coat all ingredients evenly.

Transfer the mixture to a serving platter or individual bowls. Optionally, garnish with fresh herbs such as parsley or thyme for added flavor and presentation. Serve warm.
