Prepare the Blackened Chicken
Season the chicken pieces with your choice of spices (like paprika, cayenne, garlic powder, and salt). Heat a skillet over medium-high heat with a little oil. Sear the chicken for about 5-7 minutes on each side or until cooked through and blackened. Remove from heat and let rest.

Prepare the Wild Rice
Rinse the wild rice under cold water. In a pot, add 1 cup of water for every 1/2 cup of wild rice. Bring to a boil, then reduce to a simmer and cover. Cook for about 40-45 minutes or until the rice is tender. Drain any excess water and set aside.

Prepare the Vegetables
While the chicken and rice are cooking, julienne the raw carrots and thinly slice the cucumbers. In a large mixing bowl, combine the shredded cabbage, julienned carrots, sliced cucumbers, and chopped cilantro.

Assemble the Bowl
In a large serving bowl, layer the cooked wild rice at the bottom. Add the vegetable mixture on top of the wild rice. Slice the blackened chicken and arrange it over the vegetables.

Add Toppings
Chop the roasted almonds and sprinkle them generously over the bowl. Cut the lime in half and squeeze the juice over the entire dish. Drizzle the spicy cashew sauce on top.

Toss all the ingredients together gently before serving. Enjoy your crispy rice bowl!
