Prepare the Rice
In a medium saucepan, add 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.

Cook the Chicken
While the rice is cooking, season both sides of the chicken breasts with 2 tablespoons of blackening spice. Heat a skillet over medium-high heat and add a tablespoon of oil. Once the oil is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until they are cooked through and have a nice char. Remove from the skillet and let rest for 5 minutes before slicing.

Prepare the Vegetables
While the chicken is resting, slice the avocado and apple into thin slices. Set aside.

Assemble the Bowl
In a large bowl, start with a base of chopped romaine lettuce. Add a scoop of cooked rice, followed by sliced chicken, avocado, pickled onions, and apple slices. Top with tortilla chips for crunch and drizzle with green goddess ranch dressing.
