Preparation

  1. 1

    Prepare the Salmon

Preheat your oven to 400°F (200°C). Season the salmon fillets with salt and pepper. Place them on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

  2. 2

    Slice the Cucumber

While the salmon is baking, wash and slice the cucumber into thin rounds or half-moons, depending on your preference.

  3. 3

    Chop the Scallions

Wash and finely chop the scallions, using both the white and green parts.

Assembly

  1. 4

    Assemble the Dish

Once the salmon is done, allow it to cool slightly. On a serving platter, place the baked salmon on one side. Arrange the cucumber slices and chopped scallions around the salmon.

  2. 5

    Add Tempura Flakes and Sauces

Sprinkle tempura flakes generously over the salmon. Drizzle spicy aioli and eel sauce over the entire dish for added flavor.

  3. 6

    Serve

Serve immediately while the salmon is warm. Enjoy your delicious Eckert dish!
