Preparation of Seafood

    Prepare Ahi Tuna and Escolar

    Cut the Ahi tuna and escolar fish into small cubes (about 1 cm) and set aside in a bowl.

    In a pot of boiling water, cook shrimp for 2-3 minutes until they turn pink. Drain and let cool before adding to the bowl with the fish.

    Gently fold in the tobiko into the seafood mixture, ensuring it's evenly distributed.

    Thinly slice the English cucumber into rounds and set aside.

    Finely chop the scallions and reserve for garnish.

Assembly

    Combine Ingredients

    In the bowl with the seafood mixture, drizzle the poke sauce and gently toss everything together until well coated.
