Wash and peel the potatoes. Cut them into small cubes (approximately 1/2 inch). Dice the onion and bell pepper. Mince the garlic and chop the green onions.

Cook the Potatoes

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cubed potatoes and season with salt, black pepper, paprika, and red pepper flakes. Cook for about 10 minutes, stirring occasionally, until they start to soften.

Once the potatoes are partially cooked, add the diced onion, bell pepper, and minced garlic to the skillet. Stir well to combine and cook for an additional 10-15 minutes, or until the potatoes are golden brown and fully cooked.

If using, crack the eggs over the hash during the last few minutes of cooking and cover the skillet to allow the eggs to cook to your desired doneness. Alternatively, sprinkle cheddar cheese over the hash and cover until melted.
