Prepare the Fish

    Marinate the Fish

    In a bowl, combine lime juice, garlic powder, cumin, paprika, salt, and pepper. Add the fish fillets and coat them well. Let them marinate for at least 15 minutes.

    Cook the Fish

    Heat olive oil in a skillet over medium heat. Add the marinated fish fillets and cook for about 3-4 minutes on each side, or until the fish flakes easily with a fork. Remove from heat and set aside.

Prepare the Rice

    Sauté the Vegetables

    In a saucepan, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until the onion is translucent.

    Cook the Rice

    Add the rice to the saucepan and stir for a couple of minutes. Then, add chicken broth, tomato sauce, salt, and pepper. Bring to a boil, reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked.

    Add Peas and Carrots

    Stir in the frozen peas and carrots, cover, and cook for an additional 5 minutes. Remove from heat.

Serve

    Plate the Dish

    Serve the cooked fish on a bed of Mexican rice. Garnish with fresh lime wedges if desired.
