Fajitas

Method

Preparation

  1. 1

    Marinate the Proteins

In a large bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, salt, and black pepper. Add the sliced chicken, beef, and shrimp, ensuring everything is well-coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

  2. 2

    Prepare the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to become ashy before grilling.

  3. 3

    Grill the Proteins

Remove the marinated proteins from the refrigerator. Grill the chicken and beef for about 6-8 minutes per side, or until cooked through. Grill the shrimp for about 3-4 minutes on each side until they turn pink and opaque.

  4. 4

    Grill the Vegetables

In the last few minutes of grilling, add the sliced bell peppers and onions to the grill. Grill them for about 5-7 minutes until they are tender and have grill marks.

  5. 5

    Assemble the Fajitas

Once cooked, remove the proteins and vegetables from the grill. Slice the grilled chicken and beef into strips. Serve with warm tortillas and toppings like sour cream, guacamole, and pico de gallo.
