Fajitas Mesquite Ingredients

Method

Fajitas Mesquite Directions

  1. 1

    Marinate the Steak

In a bowl, whisk together olive oil, lime juice, garlic powder, cumin, smoked paprika, salt, and black pepper. Add the skirt steak, ensuring it's well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

  2. 2

    Prepare the Grill

Preheat the mesquite grill to high heat. Make sure the grill grates are clean and oiled to prevent sticking.

  3. 3

    Grill the Steak

Remove the steak from the marinade, allowing excess marinade to drip off. Place the steak on the hot grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

  4. 4

    Grill the Vegetables

While the steak is grilling, toss the sliced bell peppers and onion in olive oil, salt, and pepper. Grill the vegetables for about 3-4 minutes until tender and slightly charred.

  5. 5

    Rest and Slice

Remove the steak from the grill and let it rest for 5 minutes before slicing it against the grain into strips.

  6. 6

    Serve

Serve the grilled steak and vegetables on warm tortillas. Garnish with fresh cilantro and any additional toppings of your choice.
