Prepare the Filling
In a large bowl, combine the cheddar cheese, Monterey Jack cheese, chopped jalapenos, sour cream, salt, and black pepper. Mix until well combined.

Assemble the Chimichangas
Place about 2-3 tablespoons of the filling mixture in the center of each flour tortilla. Fold the sides over the filling, then roll it up tightly from the bottom to the top.

Fry the Chimichangas
Carefully place the assembled chimichangas seam-side down in the hot oil. Fry in batches for about 3-4 minutes or until golden brown and crispy. Turn occasionally for even cooking.

Drain and Serve
Remove the chimichangas from the oil and drain on paper towels. Serve hot with salsa or guacamole.
