In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Stir in the shredded chicken and refried beans. Season with salt and black pepper. Mix well and cook for about 5 minutes. Remove from heat.

Assemble the Enchiladas
Preheat your oven to 350°F (175°C). Spread a thin layer of enchilada sauce at the bottom of a baking dish. Take a corn tortilla, place a portion of the chicken and bean mixture in the center, sprinkle with cheese, and roll it up. Place seam-side down in the baking dish. Repeat until all tortillas are filled.
